Blue Pea Flower and Spearmint Rice

Ingredients:

- 1 cup basmati rice
- 2 cups water
- 1 tablespoon dried blue pea flowers
- 1/4 cup fresh spearmint leaves, finely chopped
- 1 tablespoon olive oil or butter
- Salt and pepper to taste

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear.

2. In a pot, bring 2 cups of water to a boil. Add the blue pea flowers and let them steep for about 5 minutes to infuse the water with the blue color. Strain the liquid to remove the blue pea flowers, leaving you with a vibrant blue liquid.

3. In the same pot, add the rinsed basmati rice to the blue liquid. Bring it back to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.

4. While the rice is cooking, heat olive oil or butter in a pan over medium heat. Add finely chopped spearmint leaves and sauté for a couple of minutes until fragrant.

5. Once the rice is cooked, fluff it with a fork, and gently fold in the sautéed spearmint leaves. Season with salt and pepper to taste.

6. Serve the Blue Pea Flower and Spearmint Rice as a side dish to complement your main course. The rice will have a delightful blue tint and a refreshing spearmint aroma.
